It’s finally getting warm enough here in South Carolina to think about having a smoothie for breakfast. In the winter the thought of freezing my digestive system first thing is too much to bear. But the forecast for the next week is highs in the 70s and 80s, which is what I’m talking about!
If it’s less than tropical where you are, consider a mini-staycation with this wonderful breakfast, lunch, or snack smoothie.

Tropical Green Smoothie
Makes 2 servings.
*Gluten-Free, Vegan
Ingredients
- 1/2 bunch kale
- 1 can coconut milk
- 2 Tbsp walnuts
- 1 1/2 cups chopped pineapple
- 1 ripe chopped frozen banana
- 4 ice cubes
Instructions
- Strip kale leaves from stems. Add coconut milk to the smoothie followed by all remaining ingredients. Blend until smooth, adding a little water as necessary to thin. Add ice and finish blending.
