I’ve been wanting to try this breakfast salad from the wonderful blog So Let’s Hang Out for a while. I think Gina is the funniest, and she has a lot of yummy, creative recipes that I’m always drooling over.
Being a person who loves dinner food for breakfast (particularly burritos and soup), this salad wasn’t too much of a stretch for me. If it weirds you out, try it with spinach—you could do it raw or cooked. It might seem a little more like breakfast food. And it obviously makes a wonderful lunch or summer dinner as well.
And can I just say that I’m in love with the salad dressing for it? So simple and absolutely delicious enough to drink: olive oil, ACV, dijon mustard, and lemon juice.
I am not a huge fan of kale salad (although I have really enjoyed them when made by other people), so I used lettuce. Check out Gina’s recipe for all the toppings; as usual I kept it super simple, mainly because I’m lazy and I was out of tomatoes, though I added them into the recipe because it IS a BLT salad. But you can put the radishes in too because they are delicious. Also keep in mind that you can cook the egg and bacon ahead of time, so this is a totally doable before-work breakfast. I like Joy the Baker’s method of soft-boiling eggs (and the egg salad she makes here is also to die for).

Emily’s Super Simple Version of the BLT Breakfast Salad
Ingredients
Salad
- red lead lettuce
- radishes
- tomato
- cooked bacon
- soft-boiled egg
- avocado
Dressing
- 1/4 cup olive oil
- 3 Tbsp apple cider vinegar
- 1 Tbsp dijon mustard
- juice of 1 lemon
- salt and pepper to taste
Instructions
- Prepare all ingredients the way you like them. Mix salad dressing ingredients. Dress the salad and devour.
